2 cups unbleached flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 pint vanilla ice cream, melted
2 eggs, beaten
1/4 cup butter, melted and cooled
1 cup fresh blueberries or thawed frozen berries, drained
1/8 teaspoon lemon zest
Mix all dry ingredients together in bowl; in separate bowl mix, ice cream, eggs, cooled melted butter; pour mixed liquid ingredients in to dry ingredients and blend well, just until all dry ingredients are moistened; fold in blueberries and lemon zest; pour blueberry batter into well greased muffin tins.
Bake for 30 - 40 minutes or until muffin springs back when depressed in the center.
